We are dedicated to reviving the ancient art of olive cultivation in San Diego, where warm days, cool nights, and mineral-rich soils create the perfect conditions for growing premium olive varieties. Our artisanal approach combines time-honored traditions with modern, sustainable farming practices to create oils that are both delicious and environmentally responsible.

At San Diego Olive Hills, we carefully select cultivars known for both quality and resilience. Our grove features Picual, Coratina, and Frantoio – varieties chosen for their ability to thrive in our region, naturally resist pests, and produce high-polyphenol oils prized for flavor, aroma, and health benefits. This balance of science and tradition ensures a consistently exceptional harvest year after year.

Sustainability is at the heart of everything we do. We farm using no-till practices, protect our soil with grass waterways and berms, and irrigate responsibly with water from our on-site well. By integrating renewable energy solutions and exploring solar-powered milling, we reduce our footprint while protecting the integrity of our oils.

When harvest season arrives, our team works quickly and precisely. Using mechanical shakers and modern milling equipment, we ensure that olives are pressed within hours of harvest—preserving the freshness, vibrant flavors, and rich polyphenols that define true extra virgin olive oil. Every drop reflects both craftsmanship and care, from grove to bottle.

Our Process

From grove to bottle, every step of our process is carefully controlled to ensure maximum quality and flavor. We harvest our olives at the optimal moment of ripeness, typically in the early morning hours when oil content is at its peak.

Our olives are cold-pressed within hours of harvest using traditional stone mills and modern centrifuge technology. This gentle process preserves the delicate flavors and beneficial compounds that make extra virgin olive oil both delicious and nutritious.

Each batch is carefully tested for quality, and only oils that meet our exacting standards bear the Olive Hills San Diego name. We believe that great olive oil is not just a product, but an expression of place, passion, and tradition.
